Hasting on Hudson, NY

What started as a family trip to watch my sister Graduate high school, turned into a mini adventure throughout New York. Before this trip, we’d been to NY a few times but none of those trips were quite as peaceful as this one. This time we went during the summer so the weather was nice and the temperature stayed around 70 (with some spurts of rain). After seeing our girl walk (yay Victoria!!!), we went out for shaved ice at Ralph’s Italian Ice. It was the perfect stop for a hot summer night in NY. They have shaved ice and flavors galore, but they had ample options for ice cream lovers as well!

The next part of this trip lead us through New York City where we ventured into the NY Museum of Ice Cream (MOIC). This place had been on my bucket list for YEARS so it was great to finally experience it. It was so much fun and even more ice cream. By the end of it, we were turning down ice cream because you got free scoops at every turn.

All of our trips to NY are filled with ice cream but there is one restaurant that we make a priority every trip. Taqueria La Frontera, located in White Plains NY, is our absolute favorite place to eat in NY (regardless of where we are in the state). Their quesobirria tacos are amazing but they are also vegetarian-friendly (my brother loves their veggie burritos). When I go get a large agua fresca de tamarindo and 4 quesobirria tacos. Everyone there is super nice and the experience is one that I look forward to every time I’m in NY.

Hastings on Hudson is about an hour train ride outside of NYC, which puts you the perfect distance away from the hustle and bustle of the city. While there, we walked through the area and saw a lot of the local stores. Some of our favorites are Penny Lick Ice Cream Co and Clock Work Records.

The Gaylord Opryland Resort

During my visit to the Gaylord Opryland Resort for my 23rd birthday, I focused on unwinding and preparing myself for the upcoming school year. The resort’s onsite water park, SoundWaves, provided a fun outlet for me to let loose and indulge in some thrilling water slides, as well as leisurely floating around the lazy river.

In addition to the water park, the resort boasts a wide range of dining options that cater to every taste bud. Furthermore, its convenient location within walking distance of a mall and movie theater offered plenty of entertainment options off-site.

I went during August which meant that it was really hot and humid everywhere. They have a river that runs through the resort which added a bit of coolness to the environment.

In the summer there is nothing better than a cool treat and this resort had a couple options for that. After a long day at the water park it was relaxing to take a stroll through the resort gardens with ice cream from the Carvel shop.

Overall, my trip to the Gaylord Opryland Resort was a perfect combination of relaxation and adventure, making it the ideal destination for anyone looking to unwind and have a good time.

Sweetheart’s Night

Every trip I take is special in its own way and admittedly this was not my first California rodeo, but this trip will always have a special place in my heart.

I’ll start by saying that Disney’s Sweetheart Night had been on my bucket list for YEARS and for that reason alone sitting in the virtual queue for tickets was immensely stressful. With that being said it was so worth it and honestly I am already preparing to go again next year.

After flying into Orange County (SNA Airport), I spent my first couple of days exploring everything from the Aquarium of the Pacific to the Anti Mall Lab in Costa Mesa. The Aquarium of the Pacific is one of the largest aquariums in the country, with many exhibits and themed interactions that are fun for all ages. I also loved the Anti Mall, which is a site where you can visit many different shops and vendors all in one building. There is a lot of food available, and I definitely recommend going to the Good Town donut shop. There might be a line, but the wait will be worth it! I got the strawberry cheesecake donut and was amazed at how delectable it was.

On February 14th I donned the carefully crafted Sweethearts Night outfit I packed and prepared to ride Space Mountain way too many times. The night was filled with tasty Valentine’s Themed snacks and photo ops from my favorite movies but my favorite part was the shorter wait times and almost nonexistent lines. Not only do you get to participate in the many planned activities and events, but you are also given access to all of the normally crowded rides.

Sweetheart’s Night was towards the end of my trip, and after Disney, I was exhausted, to say the least. So, I spent my last few days in Cali casually exploring and concluded my trip with a sunset viewing at the beach. It was entirely too cold to go swimming, but sitting by the water and watching the sun go down is an experience I’ll probably never get sick of. Overall, 10/10 would definitely recommend.
